A Rant

I spent an hour writing a super-long rant about this. It was much too long, so I decided that everyone would already know where I stand based on the fact that Damien is a police officer and faces difficult situations every day. Needless to say, three page rant evolved into three paragraphs. I ask everyone who reads this to say a prayer for everyone involved in the Oakland tragedy, especially the officers and their families.

I came across this quote on Saturday before I heard about the officer fatalities. I thought it was pretty interesting then. It's even more appropriate after this weekend.

I did have a list of disclaimers about how parents can't always control the actions of their children and so on, but I decided to let everyone ponder the quote without my two cents.

Ugh. Sorry for the rant. I get really upset when I hear about violence involving police officers. Hits too close to home.

I know, huge stretch of my imagination, but every time I go to a boil (bawl), I can't help but think they look like little red puppies. Damien says I'm lame and need help...

Gramma Sonne's Ice Cream Pie

Hi everyone!


Since the thermostat climbed above 80 yesterday and I have the missionaries coming to dinner this weekend, I decided to make my favorite dessert ever....drumroll...... G'ma Sonne's Ice Cream Pie. Both my mom and sister were super jealous and wanted the recipe, so I thought I'd just post it and share with everyone!


I usually make it a day or two ahead of serving so it can get nice and frozen.


Crust:


1/2 c. Peanut Butter (Reduced fat doesn't work so well, gets too hard in the freezer)

1/2 c. light corn syrup

2 and 1/4 c. Rice Krispies


Mix all together and press into two disposable pie tins.


Hot Fudge:


1 can Sweetened Condensed Milk

1/2 c. regular Milk (nonfat works fine)

1 (7oz) jar Marshmallow Creme

1 (12oz) package Semi-Sweet Chocolate Chips

1 tsp. Vanilla (add after thickened)


Zap first four ingredients in microwave until smooth (about 1.5 mins) stirring every 30 seconds or so. Zap 1 more minute and beat with slotted spoon or whisk. Repeat until mixture is thick (it will get darker and thicker with each zap in the microwave. This usually takes me about 3 or 4 repeats.) Add vanilla and cool, store in fridge. I like to store in the Marshmallow Creme jar.



Assemble the pie:


On your prepared crusts, spread (softened) vanilla ice cream and drizzle (or pour) hot fudge on top. Freeze until firm and repeat. Most pie pans only hold two layers of ice cream. Take out of freezer about 15 mins or so before serving.


Enjoy!


It may not be pretty, but it is YUMMY!

  3. Willy (my ugly blind in one eye cat)- All three animals have severe separation anxiety and are constantly following me around the house... awkward when I have to go to the bathroom!

All of my WONDERFUL books that I refuse to part with- frequent argument with Damien and me...he tried to demand a "get rid of one before you buy one rule" that hasn't quite stuck....or even worked once.   1. When There's Love at Home (After a major fight with hubby and I was laying in bed glaring at him... Song is a major anger killer, so don't think about it if you want to stay mad!)

  1. Magic (I want to be Harry Potter, and magic covers pretty much all the bases, right?)


What is your favorite weather and why?

  1. HOT, HOT, HOT. I love it to be at least 90 degrees with a nice breeze. I'm not a big fan of this Houston humidity, but love Las Vegas weather (in Vegas it needs to be at least 100!).


If you could play any musical instrument, what would it be?

  1. The Ukulele...No, the harp.... NO! the cool instrument the Clutter boy played in church!
